Last Day in Dublin

After an exhausting day yesterday, we slept late. We walked around the  Temple Bar area to find a place for breakfast, “The Stage Door Cafe” had a sign that it was the best breakfast in Dublin.  Good coffee, but not a great breakfast.

We were in the Naughty Corner.

This afternoon we scheduled a tour at  Jameson. John Jameson and his wife Margaret started the distillery in 1780. Like Guinness, they very much value their employees and it is a prize place to work. The distillery was located in Dublin until 1971 when it was moved to Cork. There they have millions of casks in storage, most are blended and then shipped to Dublin for bottling. While in storage the casks lose 2% of their whiskey to evaporation, they call it the angel’s share. They say this 2% is equal to 34,000 bottles a day, lost to the angel share.  Irish Whiskey must be stored in Ireland for at least three years in order to be called Irish.

We also took part in a barrel tasting from a 20 year old, single cask.
Barrel tasting using a “copper dog” to get the whiskey out of the barrel.
After Jameson we finished with another meal at Cooper’s Corner.

Tomorrow we fly home.
